Achieving consistency across a batch requires attention to specific baker’s variables:

  • Macaronage: The process of folding dry ingredients into whipped meringue. Over-mixing creates flat, runny shells without feet; under-mixing leaves peaked, uneven tops.
  • Resting time: Once piped onto baking trays, the unbaked shells must sit at room temperature until a dry skin forms on top. This skin traps air underneath during baking, forcing the batter to lift and create the foot.
